La Jefa de Tío Carlos is a family restaurant serving creative criollo food on PR-152 in Barranquitas, which opened Feb. 14, 2026. It grew out of the transformation of Tío Carlos Bar, a space that Carlos Colón built on the remains of his home after it was destroyed by Hurricane María. Now, together with his partner Grisel Ortiz ("La Jefa"), he has reopened it with a new concept that combines terraces with views of the countryside, craft cocktails and a relaxed, bohemian atmosphere.
The menu includes tapas such as cheese balls, smoked-meat empanadas, macabeos de corned beef and pastelillos de pastelón, along with entrées featuring salmon, smoked meat and traditional sides. The cocktail list stands out with options like La Margarita del Rooftop (with lavender syrup and coconut cream) and mocktails for those who prefer no alcohol. On pricing: tapas range from $6 to $15, entrées from $10 to $20 and cocktails around $12.
