The bet? To once again transform the cocktail experience in Puerto Rico.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>The Concept: The American Bar&nbsp;<\/strong><\/h2>\n\n\n\n<p>American Bars became popular across Europe and Latin America in the late 19th and early 20th centuries as bars dedicated to cocktails \u2014 an American invention. They spread especially through hotels during Prohibition in the United States, Cofres\u00ed explained in an interview with <strong>Platea<\/strong>.&nbsp;&nbsp;<\/p>\n\n\n\n<p>The oldest and most iconic is the <a href=\"https:\/\/thesavoylondon.com\/restaurants-and-bars\/american-bar\">American Bar<\/a> at the Savoy Hotel in London, which opened in the 1890s and is said to be where author Ernest Hemingway ordered a <a href=\"https:\/\/www.ciprianidrinks.com\/en\/recipes\/cocktails\/gin\/montgomery\/\">Montgomery<\/a>, a cocktail made with gin, dry vermouth, and lemon peel. Along with the Savoy, other bars that inspired the Cui Cui concept include <a href=\"https:\/\/www.instagram.com\/boadascocktails\/?hl=en\">Boadas<\/a> in Barcelona, with <a href=\"https:\/\/elpais.com\/gastronomia\/beber\/2023-10-07\/boadas-la-cocteleria-que-cumple-90-anos-y-permanece-ajena-al-bullicio-de-las-ramblas.html\">more than 90 years of history<\/a>, and <a href=\"https:\/\/www.harrysbar.com\/en\/\">Harry&#8217;s Bar<\/a> in Paris, open since 1911.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full\"><img decoding=\"async\" src=\"https:\/\/www.plateapr.com\/wp-content\/uploads\/2026\/01\/Cui-Cui-VSJ.jpeg\" alt=\"\" class=\"wp-image-31565\"\/><figcaption class=\"wp-element-caption\"><em>Mixologist Leslie Cofres\u00ed (left) is one of the co-owners of Cui Cui and the co-creator of its cocktail menu, inspired by the classic American Bars. When we created Cui Cui, we wanted to ask ourselves: If a bar like that had survived in Puerto Rico, what would it look like now? It&#8217;s a kind of playful, teasing laugh. It&#8217;s a bit of a statement from us. We&#8217;ve spent so many years at La Factor\u00eda, known as a high-energy party bar, but Roberto Berdec\u00eda and I actually come from working cocktails at a very high level. A second room holds more tables, followed by the kitchen.<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Two paintings by Puerto Rican artist Carlos Irizarry, created in homage to Picasso, decorate each of the dining rooms. And a piece by painter and calligrapher Lorenzo Homar commemorating the 1979 Pan American Games in San Juan is the first thing you see when you walk in.<\/li>\n<\/ul>\n\n\n\n<p><strong>Accessibility. <\/strong>Cui Cui occupies the space where the restaurant El Boquer\u00f3n used to be, on the first floor of a building on calle San Sebasti\u00e1n, across from Plaza San Jos\u00e9. The dishes blend <strong>French Bistro classics with a Puerto Rican twist<\/strong>, ranging from fresh oysters, tuna tartare, and carpaccio to burgers, chicken empanadas, and steak &amp; frites.&nbsp;<\/p>\n\n\n\n<p>Castillo set out to combine classic bar fare with modern trends, incorporating pickled elements \u2014 a staple of bars from a bygone era. He drew inspiration from &#8220;a lot of global bar trends&#8221; and assured that &#8220;every single dish is a perfect fit for the menu.&#8221;&nbsp;<\/p>\n\n\n\n<p>Among <strong>the most intriguing items<\/strong> are the Oyster Po&#8217;boys, a twist on the classic New Orleans shrimp po&#8217;boy.
