At Cazuela, there is no star chef who defines the restaurant's culinary vision. There is a team of young people, veterans and students who build the experience waiting for you when you walk through the door, plate by plate, every day. A little piece of each of them comes through in the food. And it tastes incredible.

It opened in December 2024 at Condominio Hima Plaza, in Caguas. From the outside it looks like just a medical tower, but it is something else. It is contemporary Puerto Rican cooking turned into fine dining.

"We stand out because we combine things you would say don't go together. Using grandmother's cooking as a base, mixed with cultures that have influenced us in different ways in daily life," says Juan Carlos Cruz, owner of Cazuela.

PUERTO RICANS START THEIR DAY

Puerto Rico's flavor starts in your inbox

Restaurant guides, events and what's happening in Puerto Rico, straight to your inbox every morning.

Cruz leads the 30-person team that prepares everything to order: "Here everything is made from scratch. There are no store-bought sauces, and in every dish you will always find a Puerto Rican identity."

A lawyer by training and an entrepreneur by instinct, he entered the restaurant world through Ichiban, a Japanese cuisine and teppanyaki brand with more than 20 years in the business.

The Cazuela method

In Cazuela's brainstorming process, a recent culinary arts graduate's idea carries the same weight as a cook with decades of experience. Every proposal goes through the same evaluation process. And from there, the best of it reaches the diner.

"I like employees to contribute, to feel free to share opinions and ideas. I am not a chef. I am a customer with good taste," the owner says.

What we tried and you should try

Appetizers

FIlete de Atún aplatanado.

Atún Aplatanado

Tuna fillet coated in plantain, served over a white bean escabeche. The tenderness of the beans pairs with the crunch of the plantain. A light option, good for sharing.

Albóndigas de Rib Eye

The option for adventurous palates. The curry sauce, with its intense flavor, complements the density of the rib eye mixture in a combination that is bold without feeling heavy. It comes with house-made wonton chips.

Caldo de gallina con mofongo y pork belly.

Caldo de Gallina

A broth with a small mofongo at the center and a crispy piece of pork belly. Platea's favorite, because it is ideal for preparing the stomach before the main course.

Main Courses

Gnocchi de Apio con Langosta

Platea's favorite. Lobster cooked to perfection and cut into pieces: crispy on the outside, tender on the inside. Its salty profile finds balance in the celery gnocchi, which have a sweeter character. A charred corn cream brings them together.

Short Rib de Mechada

Short Rib Mechada

Shredded meat with a homestyle character, cooked in a light, delicate sweet sauce and served with bacon rice. The short rib arrives so tender it needs no knife. A substantial dish for sharing.

Dessert

Budín de Mallorca y Croissant

A creation by pastry chef Lisandra Concepción, inspired by her grandparents' cooking and Puerto Rican elements like the Cuca cookie. It is sweet but balanced: the croissant bread pudding has a salty note that evens out the flavors. The Cuca cookie ice cream tastes like reinvented vanilla.

Cocktails

At the bar, mixologist Astrid Rosado brings the same philosophy to the cocktail: fresh ingredients, precise technique and flavors you do not expect.

El Calma, un cóctel refrescante y ligero.

Calma

Vodka, dry vermouth, cucumber, grapes and fresh lime, egg white and Cazuela simple syrup. Platea's favorite.

Recuerdos Perdidos

Japanese whiskey, sage leaves, cocoa bitters, oak sawdust smoke and amaretto.

Atmosphere. The space follows an open-kitchen concept. You can sit at the bar and take in the rhythm of the kitchen. The spacious dining room has a wine cellar, event space and seating for 130 to 140 diners.

The future of Cazuela

Cruz told Platea they are considering opening a Cazuela location in Guaynabo, closer to the metro area, with the same philosophy intact: local ingredients, techniques from elsewhere, a kitchen team that brings its creativity to the plates. For now, what he is certain of is that "Cazuela es un sueño cumplido."
